Baked Haddock with Oatcake Crumble
While we all love traditional fish and chips, sometimes it's nice to put a new spin on cooking with fresh fish. This delicious recipe serves two and combines Jollys fresh haddock fillets with another Orkney staple, the oatcake. For an extra hit of sundried tomato flavouring, we used Orkney Bakery Sundried Tomato Oatcakes but Stockan's Oatcakes work equally as well.
Tammie Norrie Poo Cookies
A Tammie Norrie is the Orcadian word for a Puffin, the cute little seabirds that nest in Orkney's sea cliffs each year between April and August. These cookies are made from Tammie Norrie Poo. Well, not actually real poo (eww!) but the yummy yoghurt covered raisins we sell here at Jollys.
These cookies are really easy to make and take just 12 minutes in the oven, making them an ideal recipe for bakers young and old. They're made with oats and brown sugar for a nice gooey texture and sweet taste.
